What is healthy eating?
Contrary to what many people think, it is not about eating grilled meat, salads and fruit all day long. A healthy diet is one that includes proteins (meat, fish, eggs), vegetables and fruits, fats (oils) and carbohydrates (pasta, cereals, legumes), because we need to form the structures of the body and give it energy for its movement.
The key is in their proportions and in choosing, within each food group, the healthiest ones, for example, lean meats instead of red meats, which does not mean never eating red meat, but variety is the key to taste and health.
In addition, in Spain we have the immense luck to have the ingredients of the Mediterranean diet for our healthy catering: we have orchards and oils that are unparalleled. And hams, and wines and fishing banks..., I think we are very lucky, really.
But there are people who, due to physical problems, cannot eat "everything".
Did you know that 1 in 100 people have celiac disease? Celiac disease is an autoimmune disease whereby the immune system directs antibodies to attack gluten. This damages the lining of the small intestine and disrupts the body's ability to absorb nutrients from food. And it is permanent.
No kidding. These people have to be on a gluten-free diet for life.
And it is not the same as having wheat allergy or gluten sensitivity, these conditions can be transient and are not as serious.
But what's the good news?
There are many foods that do not contain gluten and many others that can be made without it. Long gone are the days when celiacs were forbidden to eat pastries or cakes, just look at the menu of "Celicioso"...
In Artigot Catering Madrid we are aware of the increase in the number of people with this disease, surely there have always been many, but they were not diagnosed and the poor people suffered horrible digestions that altered their character, of course!
At our events we take seriously the catering for celiacs. We always carry options for people with celiac disease, whether they are identified or not, because some are sure to appear, and we have to feed them. We try to make many of our appetizers gluten-free and complement them with other appetizers on a plate designed specifically for this ailment, which we hand-deliver. What's more, the cook who prepares these dishes cannot touch other dishes that have bread or similar.
And then there are the people who, out of conviction, do not accept animal exploitation, neither as food nor as clothing, footwear, cosmetics or leisure: the vegans.
One who is not in the business of feeding the public is not truly aware of the increase in vegans that is occurring.
The diet of a vegan is 100% vegetable, they do not eat any food with ingredients of animal origin or derived from them.
I admire her commitment to this lifestyle, because I find it a huge sacrifice to do without the "comfort" that drags us all down when we go shopping. And because I love animal protein, it has to be said....
But we believe that it is very respectable and that the subject deserves that we make an effort to develop a vegan catering as wide, delicious and elaborated as possible.
As I said in our article vegan catering, Artigot Catering Madrid has been offering a vegan menu sporadically since 2017. It triumphs especially in weddings of this format.
Coffees, cocktails and veggie menus have been included a few years ago in our Dossier of companies. And without any success. Why is that?
In addition to a "normal" offer, nobody in a corporate event is going to choose a vegan option for all their guests, it is logical. We do have separate appetizers for people who, such as celiac, allergic to seafood, lactose intolerant etc..., declare themselves vegan at the event.
The truth is that they are used to going without food at these gatherings, so they are most grateful when you surprise them with a special dish for them (remember that a vegan option is NOT just a vegetarian option).
And we have been so hooked on this topic, that we are developing a line of Vegan Cateringcalled Vegustar, which we hope to introduce this year.
We trust this company because we understand that it is necessary.
